How To Smoke Cheesy Chicken Fajitas

Spice up your next Taco Tuesday with this awesome take on cheesy chicken fajitas smoked to perfection on the Smokin Brothers Premier Plus grill. Sure to be a crowd pleaser!

Ingredients:

1 whole chicken smoked

1/2 cup of black bean corn salsa

4 to 8 oz pico de gayo

2 tbsp minced garlic

1 tbsp fajita (or taco) seasoning

1 tbsp granulated onion

1 tsp chilli powder Shredded cheddar cheese

1/2 cup of ranch dressing

Directions:

1. Smoke the chicken advance. We spatchcocked and smoke a whole chicken.

2. Cut the chicken into pieces, then break those pieces apart to give it a pulled look.

3. Put the pulled chicken in a grill-safe dish or pan, then add the minced garlic, seasoning, chili powder, granulated onion, black bean corn salsa, pico de gayo and the ranch.

4. Stir it all together.

5. And add the cheese on top. 6. It’s time to cook. Cover with foil and cook at 300F-350F until the internal temp reaches 165F (or about 45 minutes)
